Seed potatoes come in three main types, each suited for harvesting at different times of the year:

First Earlies: These are planted in late March and harvested in June/July. They're perfect for enjoying new potatoes early in the season.

Second Earlies: Planted in early to mid-April, they're ready in July/August. They offer a good balance between early harvest and good yields.

Main Crop: Planted in mid to late April, they mature latest (September onwards) but produce the highest yields and can be stored for longer winter use.
